The Chocolate Chip Cookie, an American classic. I’ve yet to meet a human to turn one down. In fact, I read that Americans eat 7 Billion chocolate chip cookies each year. That’s alotta cookies! It feels like they can be purchased anywhere there is a cash register, gas stations, fast food restaurants, bucketfuls at fairs, grocery stores. But there is nothing like a warm homemade cookie fresh out of the oven.

In my opinion, this recipe I found IS the recipe for the best chocolate chip cookies. I know, I know, that’s what they all say! Of course everyone has a preference, crispy, crunchy, crumbly, soft, gooey, etc. If it’s soft and chewy cookies for you, this is the recipe you MEM-O-RIZE. But I think you can please almost anyone with this recipe.  I was so happy to stumble upon this recipe over at the Pinch of Yum blog and after trying many other chocolate chip cookie recipes, I’m convinced that woman is some kind of cookie genius! I’ve made these many, many times and they always get eaten quickly. If I had pick one recipe on my blog, this is hands down my favorite. They are my go-to for Oasis of Rest and my neighbor sometimes gets them as “payment” for mowing my lawn.

Quick Tip

There is a good amount of self control needed if you taste the batter. Because you may feel you need to keep re-tasting, if you know what I mean!

The Best Chocolate Chip Cookies

Ingredients
  

  • 8 tablespoons salted butter
  • 1/2 cup cane sugar
  • 1/4 cup brown sugar packed
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon extra fine pink himalayan salt
  • 3/4 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees.
  • Microwave the butter (about 40 seconds to just melt it).
  • With a stand mixer, beat the butter and sugars until creamy. Add the vanilla and egg, beat on low speed until just incorporated (10-15 seconds).
  • Add the flour, baking soda and salt. Mix until crumbles form. Use your hands to press the crumbles together to make dough.
  • Use your hands to mix in the chocolate chips.
  • Divide the dough and roll into 12 large balls.
  • Bake for 9 - 11 minutes. The cookies will still be puffy and not look fully cooked. When you see the slightest bit of brown, pull them out and let them cool on the pan.

Notes

I use organic ingredients whenever possible. For this recipe, I used organic cane sugar, brown sugar, vanilla, eggs and chocolate chips.
