Banana Nut Muffins

Ingredients
  

  • 2-3 organic ripe bananas (about 1 1/4 cup) mashed
  • 1/3 cup organic unsalted butter melted
  • 3/4 cup organic cane sugar
  • 1 large organic egg beaten
  • 1 teaspoon organic vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 pinch pink himalayan salt
  • 1 1/2 cups organic unbleached all-purpose flour
  • 1 cup chopped walnuts

Instructions
 

  • Preheat oven to 350 degrees. Prepare muffin pan with paper liners.
  • Thoroughly mash bananas in a large bowl. Stir in the melted butter. Mix in the sugar, beaten egg and vanilla extract.
  • Mix in baking soda, salt and cinnamon.
  • Add the flour and mix just until combined.
  • Fold in chopped walnuts.
  • Fill muffin cups and bake for 18-20 minutes.
