Lemon Cake

organic avocado oil

organic eggs
1 1/3

organic whole milk

tablespoon
fresh organic lemon juice

fresh organic lemon zest

organic cane sugar

unbleached all-purpose flour

teaspoon
baking powder

teaspoon
baking soda

teaspoon
extra fine pink himalayan salt
Frosting
1/2
cup
organic butter
softened

ounces
cream cheese
softened

cups
organic powdered sugar
1
tablespoon
fresh organic lemon juice
1/2
teaspoon
fresh organic lemon zest
1
teaspoon
organic vanilla extract
Instructions
Cupcakes
Preheat oven to 325 degrees and prep muffin pans.
In a large mixing bowl, add oil, eggs, milk, lemon juice and lemon zest. Cream for 2 minutes.
In a separate large mixing bowl, whisk together sugar, flour, baking powder, baking soda and salt.
Fold dry ingredients into liquid mixture.
Bake for 15-20 minutes.
Cool cupcakes.
Frosting
In a large bowl, cream together butter and cream cheese for 4-5 minutes until light and fluffy.
Add powdered sugar, lemon juice, vanilla and lemon zest, cream together and chill.
Frost and enjoy!
