Pumpkin Spice Chocolate Chip Cookies

Servings: 24 cookies

Ingredients
  

  • 2 1/4 cups organic unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon extra fine pink himalayan salt
  • 1 cup (2 sticks) organic unsalted butter softened
  • 3/4 cup organic cane brown sugar lightly packed
  • 1/2 cup organic cane sugar
  • 3/4 cup organic canned pumpkin
  • 1 large organic egg
  • 2 teaspoons organic vanilla extract
  • 2 cup semi-sweet miniature chocolate chips

Method
 

  1. In a large mixing bowl whisk together flour, baking soda, pumpkin pie spice and salt.
  2. In a separate large mixing bowl, using a hand mixer, cream together butter and sugars until light and fluffy.
  3. Beat in pumpkin, egg and vanilla extract until combined.
  4. Add flour mixture and beat on low until no raw flour appears.
  5. Fold in chocolate chips.
  6. Cover and chill dough for 30 minutes.
  7. Preheat oven to 350 degrees and prep pan.
  8. Scoop 1 inch balls onto prepared baking sheets, 2 inches apart.
  9. Bake 9-12 minutes until puffed up and golden around edges.
