When it starts getting chilly and the leaves start falling off the trees, the first thing I want to bake are these 3 Ingredient Pumpkin Chocolate Chip Muffins. I learned how to make these over a decade ago when I was visiting with one of my Mom’s friends, she called them Pumcakes. I was surprised at how easy it was to make them and how delicious they were. If you love pumpkin and you love chocolate, these will be your new favorite. They are moist and packed with flavor.
This recipe is easy to remember: a box + a can + a cup! Grab a box of spice cake mix, a can of pumpkin puree (not pumpkin pie mix), a cup of your favorite chocolate chips and you’re off! The chocolate chips can be any kind you like… dark, semi-sweet, chunks, you can even use mini chocolate chips.
A few tips:
- Run the box cake mix through a sifter.
- Add a few chocolate chips to the top of the muffins before you bake.
- Eat them warm.

3 Ingredient Pumpkin Chocolate Chip Muffins
Ingredients
- 1 box spice cake mix
- 1 can pumpkin puree
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°
- Prepare a 12 count muffin tin with cupcake liners
- In a medium bowl, combine the pumpkin spice cake mix and the pumpkin puree, the batter will be thick
- Fold the chocolate chips into the batter
- Add 1/3 cup of batter into each cupcake liner
- Bake for 20-25 minutes or until toothpick comes out clean

I love the Pumcakes and so does everyone they has tried them! So moist, tastey and easy. I sometimes use mini muffin pans – just the perfect 2 bite treat!
