I’ve seen the single serving packages in the store for chocolate mug cake and thought it was a great idea. For the times you want something sweet but don’t want to make a cake because you’re afraid you’ll eat the whole thing! Especially right now, while we are all at home, mostly wanting to shove our faces full of comfort food because we keep hearing the phrase “uncertain times”. If I were a bettin’ woman, I’d bet we will all be coming out of this COVID-19-stay-at-home thing different. Different as in… 19 pounds up or 19 pounds down, yikes. So I figure now is as good a time as any to share a few single serving recipes. You know, to help keep us all from laying down trying to zip up our jeans in a couple weeks.
I found this recipe for chocolate mug cake on the Table for Two Blog. I made it for the first time at my Grandma’s house, I threw all the ingredients in a tote bag and headed over for a visit. The recipe said to mix it all in a bowl and then pour it into a mug but since I hate doing dishes, I just mixed everything together in the mug with a small whisk and it worked fine. I have adapted and am willing to dirty an extra dish now because if you grease a microwave safe mug and then pour the mixed ingredients in, it is much easier to get all of the chocolatey goodness out of the mug. This chocolate mug cake is a comfort food win, it’s quick and easy with minimal mess!
Chocolate Mug Cake
Ingredients
- 1/4 cup unbleached all-purpose flour organic
- 2 tablespoons unsweetened cocoa powder organic
- 1/4 teaspoon baking powder
- 2 tablespoon cane sugar oranic
- 1/8 teaspoon extra fine pink himalayan salt
- 1/4 cup + 1 tablespoon milk organic
- 2 tablespoons avocado oil
- 1 tablespoon mini chocolate chips
Instructions
- In a medium bowl, whisk together dry ingredients.
- Mix in milk and vegetable oil until combined with no clumps.
- Lightly coat the inside of a large microwave-safe mug with cooking spray and pour in batter.
- Add the chocolate chips to the top, they'll sink in as it cooks.
- Microwave for 60-90 seconds.
- Carefully remove from microwave, the mug will be hot, and enjoy!
