If you’re a fan of blueberries, this Blueberry Crumble for One recipe has your name all over it. It’s straightforward with staple pantry ingredients and a hefty handful of blueberries. Make this when you’re hungry for a warm baked good but you don’t want to make a full pan of something that will either go to waste or sit there tempting you to eat the whole pan. My mouth waters just thinking about pulling this bubbling blueberry goodness out of the oven!

One thing to note, make sure your individual baking dish is big enough, no one wants their delicious dessert to overflow, this recipe calls for a 10 ounce ramekin. I like put my single serve dishes on a cookie sheet in the oven, just to be safe.

Blueberry Cobbler for One

Ingredients Method Notes

Ingredients
  

  • 2/3 cups blueberries
  • 1 1/2 teaspoons cane sugar
  • 1 1/2 teaspoons lemon juice
Cobbler Topping
  • 2 tablespoons unbleached all purpose flour
  • 1 tablespoon cane sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons milk

Method
 

  1. Heat oven to 375 degrees.
  2. Combine blueberries, sugar and lemon juice in a 10oz ramekin.
  3. In a separate small bowl, make the cobbler topping. Whisk together the flour, sugar, baking powder and salt. Add milk and whisk the batter until smooth.
  4. Pour the batter evenly over the blueberries.
  5. Bake for 25-28 minutes until the topping is golden brown.

Notes

I use organic ingredients whenever possible. For this recipe, I used organic blueberries, cane sugar and milk.
