Beat the summer heat with this no-bake key lime cheesecake. This recipe is a simple, tart and creamy treat. Make the crust, pour the filling, chill for 2 hours and viola’, dessert is served.

The Magic of a Food Processor

This was my first spin with a food processor, it took this recipe from easy to effortless, I can’t wait to use this tool for more in the kitchen. Gone are the days of manually crushing graham crackers and struggling to blend thick filling ingredients until smooth. I was able to whip up the crust and filling in minutes.

Tips

  • Rolling your limes before squeezing helps release the juice.
  • Fresh limes for fresh flavor: You can use key limes (tart flavor) or regular limes (tang flavor) for this recipe. I use this affordable citrus juicer to help speed up the process.
  • Zest sparingly. If you decide to add zest to this recipe or for garnish, less is more. Too much and it could end up being a touch bitter. Ask me how I know.
  • Get creative with toppings. I was going for a cherry limeade feel on this so I added cherries but you can add any fruit that pairs well with lime.  Homemade whipped cream can be a great addition. You can garnish with a lime slice or even a dehydrated lime.

No-Bake Key Lime Cheesecake

Ingredients Method

Ingredients
  

Crust
  • 16 graham crackers
  • 3/4 cup butter melted
Filling
  • 2 packages (8 ounces each) cream cheese cubed and softened
  • 1 cup powdered sugar
  • 2/3 cup lime juice
  • 3/4 cup heavy cream
  • 1/2 teaspoon vanilla

Method
 

  1. Lightly spray a 9x9-inch pan with non stick cooking spray and line with parchment paper.
  2. Place the chopping blade in the food processor and add graham crackers. Run on high until they are finely ground.
  3. Add the melted butter to the graham crackers and run on low until the mixture is evenly combined.
  4. Transfer graham cracker mixture to the prepared pan. Spread into an even layer and press into pan to form a crust. Place in freezer while preparing the filling.
  5. Clean the bowl of the food processor and install the dough blade. Add all filling ingredients. Run on high until the mixture is combined.
  6. Pour filling over prepared crust and spread in an even layer. Chill for at least 2 hours, then cut and serve.
