Happy Fall Y’all! This is my favorite time of year! I think fall is one of the reasons people proclaim “Midwest is Best”. The crisp air, the colorful crunchy leaves and don’t even get me started on all the smells… and flavors. Pumpkin spice everything, please. These pumpkin spice chocolate chip cookies are my new favorite thing! Pumpkin Spice + Chocolate = Happy! These cookies are easy to make! I’m pretty sure these will hit your go-to fall baking list after you take your first bite.
Speaking of seasons changing, about 2 and a half years ago, I left Corporate America and started working for a blogger full time. I had worked in office environments since High School so this was a very big change for me. Having photography already under my belt was a great help but I had to dive in and learn everything else. I learned hands on while I took courses in social media, technology and the business of blogging. I really enjoyed using my creativity daily. When the season of working on her blog ended, I put all of that new information to good use and started consulting with small businesses. I began building websites and blogs and helping people create social media strategies. I figure it’s a good a time as any to get my own blog online so I can share free resources and more with you. Pumpkin Spice Chocolate Chip Cookies
Ingredients
- 2 1/4 cups organic unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon extra fine pink himalayan salt
- 1 cup (2 sticks) organic unsalted butter softened
- 3/4 cup organic cane brown sugar lightly packed
- 1/2 cup organic cane sugar
- 3/4 cup organic canned pumpkin
- 1 large organic egg
- 2 teaspoons organic vanilla extract
- 2 cup semi-sweet miniature chocolate chips
Instructions
- In a large mixing bowl whisk together flour, baking soda, pumpkin pie spice and salt.
- In a separate large mixing bowl, using a hand mixer, cream together butter and sugars until light and fluffy.
- Beat in pumpkin, egg and vanilla extract until combined.
- Add flour mixture and beat on low until no raw flour appears.
- Fold in chocolate chips.
- Cover and chill dough for 30 minutes.
- Preheat oven to 350 degrees and prep pan.
- Scoop 1 inch balls onto prepared baking sheets, 2 inches apart.
- Bake 9-12 minutes until puffed up and golden around edges.
