										<content:encoded><![CDATA[<p>The best part of my Babushka&#8217;s banana cake recipe for ME, is it takes me right down memory lane. As soon as I smell it baking, I can see myself at her kitchen table. My favorite way to bake is using recipes that have been passed down through generations, because they&#8217;re tried and true.</p>
<p>The best part for YOU, is that the recipe is simple, which is great for a beginner baker. No fancy ingredients or complicated techniques required. Just mash up those ripe bananas that have been sitting on the counter for a little too long, add in a few baking staples, and you&#8217;re good to go. The batter comes together in minutes. The hard part is waiting for it to finish baking, while the smell entices you to take it out early so you can dig in.</p>
<p>This cake is so moist and flavorful you don&#8217;t even need frosting. The sweetness of the bananas shine through. However, I won&#8217;t stop you if you want to add some homemade whipped cream. I learned how to make this easy recipe from a long time friend. It only takes 3 ingredients and about 5 minutes from start to finish.</p>
<h3 id="homemade-whipped-cream">Homemade Whipped Cream</h3>
<ul>
<li>1 cup heavy whipping cream</li>
<li>2 -3 tablespoons powdered sugar (adjust to taste)</li>
<li>1 teaspoon vanilla</li>
</ul>
<p>Add all ingredients to a mixing bowl. Using your electric mixer, starting whipping the cream on low speed (to prevent splattering) for about a minute. Gradually increase the speed to medium-high as the cream begins to thicken. Continue whipping until soft peaks form.</p>
<blockquote><p>Tips for Baking</p></blockquote>
<p><strong>Embrace the brown spots:</strong> The uglier the banana, the sweeter the cake!</p>
<p><strong>Don&#8217;t overmix:</strong> When combining the wet and dry ingredients, mix until just combined to avoid tough texture.</p>
<p><strong>Use a metal pan:</strong> <a href="https://amzn.to/3MocUp0" target="_blank" rel="noopener">Metal pans</a> help distribute heat evenly and efficiently preventing undercooked spots. I used a glass dish the first time I made this and the middle of the cake wouldn&#8217;t rise or cook all the way through.</p>
<p>Whether enjoyed at breakfast with a warm beverage, as an afternoon pick me up, or a sweet dish after dinner, banana cake is more than just a dessert, it&#8217;s a testament to the versatility of the humble banana.</p>

<p>Pears are naturally sweet, so if you want a delicious desert but are trying to <em>pare</em> down on sugar, this one is for you. On the other hand, you can <em>pair</em> it with whipped cream or vanilla ice cream.</p>
<p>This recipe is very versatile. It can be served hot or cold. You can add more cinnamon or try adding a pinch of nutmeg. You could even swap out the honey for maple syrup. Play with the ingredients you love! Oh and there&#8217;s no need to peel the pears!</p>

										<content:encoded><![CDATA[<p>A couple years ago, I spotted apple butter on the shelf at the grocery store. I remember trying it for the first time on a warm cornbread muffin and thinking where have you been all my life?!? How am I just finding out about this and what else have I been missing out on?!? I had to learn how to make it and now it is a staple in my fridge.</p>
<p>This easy slow cooker apple butter is just that, easy. The hardest part was peeling the apples and that wasn&#8217;t hard, just time consuming. You don&#8217;t even have to peel the apples but I wanted to and I&#8217;m slow so I smartened up and recruited my Main Squeeze to peel, core and cut along side me. Throw everything in the crock pot on low and go to sleep. Wake up to what smells like an apple pie cooking in your house and try not to eat it all with a spoon.</p>
<p>One quick note, this recipe is spicy, not hot spicy but fall spicy! I plan to make it again next year in a larger batch. I&#8217;ll keep the spices the same but may use twice as many apples. I put this in it glass jars and gave some to my neighbors, family and friends, I didn&#8217;t have any complaints.</p>
<p>*Update &#8211; I have made this recipe again with the same quantities of spices but 5 pounds of apples instead of 3 and it was still full of flavor.</p>
<h4 id="what-i-learned">What I learned:</h4>
<p>I looked through a lot of recipes on Pinterest and found out that there is no exact science to this. It&#8217;s more of a mish-mash, so throw in your apples and let your favorite spices &#8220;fall&#8221; as they may.</p>

<p>This tastes like apple pie. The jar you gave me was too little, I&#8217;m going to have to savor every bite.</p>
